Bacon-Mustard Salad Dressing

With an orange juice base, this dressing has a smoky flavor from the bacon and a tang from the mustard.

  • 1 bacon strip, diced
  • 6 Tbs. orange juice
  • 1/2 C. fat-free sour cream
  • 3 Tbs. finely chopped green onions (white portion only)
  • 1 Tbs. Dijon mustard
  • 1 garlic clove, minced
  • 2 tsp. brown sugar
  • 1/4 tsp. salt
  • 1/8 tsp. pepper

In a non-stick skillet, cook bacon over medium heat until crisp. Remove with a slotted spoon to drain on paper towels. Add orange juice to drippings; stir to loosen browned bits from pan. Add all other ingredients.
