These pork pinwheels are super quick and easy, even though they look like a fancy hourdovers! Serve over mashed potatoes for a delicious mid-week meal.

Ingredients

  • 1 pork loin
  • 3 cups chicken stock
  • 1 tbsp olive oil
  • 1 lb bacon, thick slice
  • 1 tbsp rosemary
  • 6 basil leaves
  • 3 cloves garlic, chopped
  • ⅓ cup onions, chopped
  • 4 servings instant mashed potatoes as a side.

Preheat the oven to 300 degrees F
Rub the pork loin with olive oil, salt and pepper. Once seasoned, place in a large skillet. Put this over medium heat.
Cook your pork, turning occasionally, until evenly browned. This should take about 2 minutes per side. Once browned, scatter the seasoning blend or herbs over the pork.
Transfer pork to an oven-safe baking dish.
Drape slices of bacon over the top of your pork roast. Then, combine the chicken stock, rosemary, thyme, basil, sage and garlic in a small mixing bowl and pour over the roast. Place onions around the sides, then cover the baking dish lid or aluminum foil.
Roast your pork for about 10 to 15 minutes, or until a thermometer inserted into the thickest part registers 150 F internal temperature.
As your roast bakes, prepare your instant mashed potatoes. Serve sliced roast over potatoes and enjoy!
