Bacon Roll-ups

These bacon roll ups are so simple and easy to make for any party. I love them. I like to have a batch in the freezer so I can have them on hand whenever I need them.

Melt margarine in a saucepan. Remove from heat; stir into stuffing, then add egg and sausage. Blend thoroughly. Chill 1 hour for easier handling; then shape into small oblong shapes, about the size of pecans. Cut bacon slices into thirds, crosswise. Wrap one around dressing (stuffing) mixture and fasten with a toothpick. Place in shallow pan and bake at 375 degreesĀ for 35 minutes or until brown and crisp, turning halfway during cooking. Drain on paper towels and serve hot. May be made the day before baking. Also, freezes well before baking.

I usually double or triple the recipe and keep some on hand in the freezer for unexpected guests.
