Bacon Spinach Salad
- 4 slices bacon, diced
- 1/4 C. white vinegar
- 4 tsp. sugar
- 1/4 tsp. salt
- 1/8 tsp. pepper
- 1 10-oz. bag fresh spinach, washed
- 5 med. green onions (chopped, 1/3 C.)
1. Cook the bacon over medium heat, stirring occassionally until crisp, do not drain.
2. Add vinegar, sugar, salt and pepper.
3. Heat through, stirring constantly until sugar is dissolved.
4. Remove from heat.
5. Add spinach and onions to mixture.
6. Toss 1-2 minutes until spinach is wilted.
