Ingredients

  • For the chicken
  • 4 medium chicken breasts
  • 4 slices of thick cut bacon
  • 4 oz. havarti cheese
  • 2 tsp. fresh parsley, chopped
  • Veggies
  • ½ C. carrots, chopped
  • 1 small red onion, chopped
  • 1 orange bell peppers, chopped
  • 1 green bell peppers, chopped
  • 2 medium zucchini, chopped
  • Olive oil, to drizzle
  • Salt and pepper to taste

Preheat the oven to 425 degrees. Butterfly the chicken. Slice the havarti into 1 in. strips and then in half. Cook the bacon on a skillet so that it’s just done. Let the bacon drain. Place the strips of cheese and bacon into the inside pocket of the chicken. Put the chicken on a baking sheet along with the veggies and drizzle it with olive oil and salt and pepper. Let the chicken and veggies bake for about 40 minutes (it’s best to put the veggies in after 20 minutes so they don’t burn).
