  • 2 ears corn
  • 1 pound fava beans
  • ½ pound chopped bacon
  • 3 halved chicken breasts
  • 1 pound diced potatoes
  • 1 chopped onion
  • 1 chopped chile pepper
  • 1 cup chicken stock
  • ½ pint halved cherry tomatoes
  • 8 ounces cream cheese
  • 2 tablespoons chopped chives
  • 2 grated cloves garlic
  • 2 teaspoons hot sauce
  • 2 tablespoons olive oil

Boil a few inches of water and season with salt. Add the beans and boil for 5 minutes. Fill a large bowl with ice water and transfer the beans to the bowl. Drain the beans and score them to remove the shells. Season the chicken with salt and pepper and then heat the olive oil over medium-high heat in a large pot. Add the chicken skin down and cook until the meat is browned. Put the chicken on a plate and add the bacon to the pot. Cook until it is crisp and remove from the heat. Place the diced potatoes in the bacon grease pot for a couple minutes. Cut the corn kernels off the cob and then add the corn and chili peppers to the pot. Cook for 10 minutes. Pour in the chicken stock and tomatoes and stir everything together.

Add the chicken and bacon back to the pot and simmer for 10 minutes. In a medium bowl, mix the cream cheese, garlic, and herbs. Season the mixture with salt and pepper and then add the mixture to the succotash and stir to combine before adding the hot sauce. Divide between dishes and serve.
