Bacon Swiss Meatloaf

I made this meatloaf recipe recently and it was really good! I started with a recipe from the January/February 2004 Quick Cooking and changed it a little bit.

  • 12 slices bacon, cooked and crumbled, divided
  • 1/2 C. milk
  • 1/2 C. soft bread crumbs
  • 1 1/2 C. Swiss cheese
  • 1/2 Tbs. garlic powder
  • 1/2 Tbs. onion powder
  • Salt & pepper
  • 1.5 lbs. ground beef
  • Topping:
  • 1/4 C. BBQ sauce
  • 1/2 C. Swiss
  • Reserved crumbled bacon

Mix together milk, bread crumbs, Swiss cheese, garlic powder, onion powder, salt and pepper. Reserve a few Tbs. of the crumbled bacon; add the rest to mixture. Crumble up ground beef on top and mix all together; form into loaf and place in baking pan.

Bake at 400 degrees for 40 minutes. Top with BBQ sauce, reserved bacon and Swiss cheese and bake for 10 more minutes.
