Serving Size / Yield
- 10 Medjool dates, halved
- 10 slices lean bacon, halved
- 1/2 C. creamy goat cheese
- plastic sandwich or freezer bag
Preheat the oven to 375 degrees. Wrap each date half with a 1/2 slice of bacon. Place the bacon-wrapped dates, seamside down on a baking rack on top of a paper towel lined baking sheet (this allows for easy clean up as well as more even cooking of the bacon). Bake the dates for 10 minutes before taking a look and rotating them as needed; continue to bake until bacon has reached desired crispiness. Allow the dates to cool about 5 minutes. Place the goat cheese in your plastic bag, and snip off one of the bottom corners. Pipe a little dollop of goat cheese onto each date. Skewer each date with a toothpick and serve.
