This recipe is simple and delicious: Medjool dates wrapped in a blanket of bacon! These are a favorite holiday appetizer in my family, and it's easy to come up with your own variation. Try using different cheeses (they're delicious with blue cheese or cream cheese) or as a topping for a light green salad.

  • 10 Medjool dates, halved
  • 10 slices lean bacon, halved
  • 1/2 C. creamy goat cheese
  • toothpicks
  • plastic sandwich or freezer bag

Preheat the oven to 375 degrees. Wrap each date half with a 1/2 slice of bacon. Place the bacon-wrapped dates, seamside down on a baking rack on top of a paper towel lined baking sheet (this allows for easy clean up as well as more even cooking of the bacon). Bake the dates for 10 minutes before taking a look and rotating them as needed; continue to bake until bacon has reached desired crispiness. Allow the dates to cool about 5 minutes. Place the goat cheese in your plastic bag, and snip off one of the bottom corners. Pipe a little dollop of goat cheese onto each date. Skewer each date with a toothpick and serve.

  • Do you know how long I've had this recipe? Well, actually, my version does not use the goat cheese. Mine are just dates and bacon. I first made these bacon-wrapped dates for company when my son was about 5 years old and he's now in his early 30's! That's a long time! This might sound strange at first, with the salty and sweet, but, trust me, it is absolutely a delicious appetizer. They're nearly always gone before they ever have a chance to really cool! Try it... you won't be sorry!
