Bacon-Wrapped Shrimp Skewers

- 24 raw jumbo shrimp
- 12 slices of bacon, cut in half
- 4 oz pepper jack cheese, cubed into 24 pieces
- 6 oz can crushed chipotle peppers, drained
Fry the bacon on the stove top just until the edges begin to curl, then remove from heat. Butterfly each jumbo shrimp, and tuck one cube of pepper jack cheese inside each shrimp. Wrap each shrimp with bacon, then thread the skewer through the bundle to hold in place. Add as many shrimp to each skewer as you wish, then marinate them in the crushed chipolte peppers for approximately 30 minutes.
Place the marinated skewers on a hot grill, turning every few minutes, until the bacon becomes crisp. For additional spice, brush the skewers with the crushed chipolte peppers as they cook. Serve by themselves or over rice.
