  • 2 Tbsp. butter
  • 1 pkg. chopped green beans
  • 1/2 C. chopped mushrooms
  • 2 tsp. chopped thyme
  • 4 boneless skinless chicken breasts
  • 1 C. shredded cheddar cheese
  • 1 pkg. precooked bacon slices

Preheat the oven to 350 degrees and melt the butter in a skillet. Add the green beans, mushrooms, and thyme and cook 2 minutes while stirring. Pound each chicken breast with a mallet to ¼ inch thickness. Combine the mushroom mixture and cheese in a bowl and spoon ¼ cup onto each chicken breast. Roll the chicken up and secure with a toothpick. Wrap each piece of chicken in about 3 bacon slices and place in a baking dish. Bake 45 minutes until the chicken is no longer pink.
