  • 1 (1.5-2 lb.) pork tenderloin
  • 1 lb. shiitake mushrooms, sliced
  • ½ lb. thick cut pepper bacon
  • 1 red bell pepper, diced
  • 2 cloves of garlic, minced
  • 1medium red onion, diced
  • ⅓ C. cream cheese
  • ¼ C. olive oil
  • 1 ½ tsp. coarse sea salt
  • * you will need a strings to tie the turkey together

Preheat the oven to 425 degrees. Butterfly the tenderloin and cover it with plastic wrap. Using a glass or food mallet, beat the tenderloin flat. Coat the tenderloin with the olive oil and rub it with salt and pepper. Saute the veggies in a skillet until they’re just tender. Fold the veggies into cream cheese and spoon the mixture into the tenderloin and roll it. Once the loin is rolled, wrap the bacon around it and tie it with string to keep it shut. Bake the meat for 30-35 minutes until it’s cooked thoroughly. Let the meat stand for about 10minutes before cutting it.
