You can never go wrong with bacon-wrapped anything. This turkey recipe is for the whole bird but you could wrap and single part of the turkey as well. Or just make sure those parts you carve have some delicious bacon goodness.

  • 1 stick butter, soft
  • 2 tsp. paprika
  • 2 tsp. garlic, minced
  • 2 tsp. rosemary, chopped
  • 1 T. sage leaves, chopped
  • 1 tsp. thyme
  • 1 ½ T lemon juice
  • 12 lb. brined turkey
  • 12 bacon strips
  • 10 fresh rosemary sprigs

Once you’ve brined your turkey preheat oven to 500 degrees and prepare a large roasting pan with a raised rack and 2 cups of water in the bottom of the pan. Combine butter with paprika, garlic, rosemary, sage, thyme, and lemon juice. Rub 1 tablespoon of butter under the skin of the turkey but be careful not to tear the skin and set the rest aside. Place the turkey breast side up and bake the turkey for about 15 minutes then spread the rest of the butter on top. Roast the turkey for about 10 more minutes or until skin is golden brown then remove turkey from oven and reduce heat to 350 degrees. Turn turkey over (breast side down) and cover the back side with bacon and rosemary sprigs then cook until internal temp is 155 degrees which will take approximately 2 hours maybe more. Wait at least 20 minutes to carve!
