  • 4 bagels
  • 8 tablespoons butter
  • 2/3 cup flour
  • ¼ cup chopped onion
  • 4 cups broccoli
  • ¾ cup heavy cream
  • 6 cups chicken broth
  • 1 teaspoon salt
  • ¼ teaspoon pepper

Begin by cutting a thin layer off the top of each bagel. Then carefully hallow out the larger bottom layer. Set aside the removed bagel bread for dipping. Melt 6 tablespoons of butter over low heat and add the flour. Stir until mixed and then set aside off the heat. In a larger pan, melt the remaining butter and add the chopped onion. Cut the broccoli into bite-size pieces and add it to the pan once the onion is tender. Cook and stir for 6 minutes. Stir in the chicken broth and increase the heat to bring the pan to a boil. Whisk constantly and add the flour mixture. Add the salt and pepper and cream. Heat thoroughly and pour into the bagel bread bowls to serve.
