  • 1-1/2 tsp. dried oregano
  • 1-1/2 tsp. ground cumin
  • 1 tsp. garlic powder
  • 1/2 tsp. chili powder
  • 1/2 tsp. paprika
  • 1-1/2 lbs. chicken breast, cut into thin strips, boneless
  • 1/2 medium sweet red pepper
  • 1/2 medium green pepper
  • 4 green onions, thinly sliced
  • 1/2 C.onion, chopped
  • 6 flour tortillas
  • 4 T. extra virgin olive oil, divided
  • 1-1/2 tsp. seasoned salt

In a resealable plastic bag, combine oil, lemon juice and seasonings and add the chicken. Seal and marinate evenly; refrigerate for at least an hour. In a skillet, saute peppers and onions and cook. Toss the chicken over medium-high heat for 5 minutes. Then mix with the peppers and onions. Serve with pinto bean or guacamole.
