Baked Apple Delight

This is a deliciously nutritious dessert with enough sweet to be satisfying but not overpowering.

Ingredients

  • 9 apples, cored
  • 8 oz. sugar-free 7-Up (or any sugar-free drink)
  • Cinnamon Nutmeg

Directions

Place apples close together in 8-inch square pan. Add drink. Sprinkle cinnamon and nutmeg over apples. Bake at 350 degrees until tender.

Yield: 9 servings

  • This is a delicious and easy lo-cal dessert or snack. I usually use diet raspberry or other fruit-flavored soda instead of 7 Up but any soda that goes with apples will do. To make it fancier we usually serve it warm with a dollop of low cal and/or low fat whipped topping or ice cream. And you can make as many or as few apples as will fit your pan: I use 4 in an 8x8" pan.
