Baked Apples with Yogurt and Almonds

Making this dish is easy because you can "bake" the apples in the microwave!

Ingredients

  • 2 med. tart apples, cored an peeled 1/3 of the way down
  • 1 4-inch slice or orange rind, cut into thin matchsticks
  • 1 tsp. reduced-fat margarine
  • 1/2 fresh lemon
  • 1/2 tsp. ground cinnamon, or to taste
  • 1/2 tsp. sugar
  • 2 Tbs. plain nonfat yogurt
  • 1 tsp. slivered almonds

Directions

Place cored and partially peeled apples in a microwave-safe dish. Stuff apples with orange rind sticks and top with margarine. Rub the pared flesh of the apple with lemon, squeezing some lemon juice over each apple if you desire. Sprinkle with cinnamon and sugar substitute.

Fill the dish with water 1/3 of the way up the sides of the apples. Cover with plastic wrap and cook in the microwave for 4 to 5 minutes on High.

Remove the plastic wrap carefully because steam may have built up. Place apples on serving plates. Top each apple with yogurt and almond slivers.
