Baked Artichoke Dip
Serving Size / Yield
- 1 can (14 oz.) artichoke hearts, rinsed, drained and chopped
- 3/4 C. fat-free mayonnaise
- 1 can (4 oz.) diced green chili peppers, drained
- 3/4 C. grated Parmesan cheese
Coat a medium baking dish with nonstick cooking spray. In that dish, combine artichokes, mayonnaise, peppers and all but 2 Tbs. of the Parmesan. Mix well. Sprinkle remaining Parmesan evenly over the top. Bake in preheated 350-degree oven until top is a rich golden brown, 40 to 50 minutes.
