These banana doughnuts are meant to be enjoyed from morning to night. But, if you're looking for a special dessert, simply top the baked doughnuts with chocolate fudge and a scoop of vanilla ice cream.

  • 2 C. all-purpose flour
  • 1 tsp. baking soda
  • 1/4 tsp. salt
  • 1/2 C. butter
  • 3/4 C. brown sugar
  • 1 tsp. vanilla
  • 2 eggs, beaten
  • 2 1/2 C. overripe bananas, mashed
  • 1/2 C. semi sweet chocolate chips
  • Filling:
  • 1 C. whipped cream
  • 2. banana slices, mashed

Preheat your oven to 350 degrees F. Lightly butter donut pan. In a large bowl, mix flour, baking soda and salt. Cream together butter and brown in a separate bowl. Combine vanilla, eggs and mashed bananas until well mixed. Stir banana mixture into flour mixture. Stir until moisten. Fold in chocolate chips and mix well. Pour batter in donut pans. Bake for 8 to 10 minutes. Let it cool for a few minutes.

For filling, slice doughnuts in half. Mix whipped cream with banana slices until thick and smooth. Pour filling between the doughnut halves and add any additional toppings to your desire.
