Baked Barley with Mushrooms

Ingredients

  • 1 C. pearl barley
  • 1/3 C. butter
  • 1 onion, chopped
  • 2 C. sliced mushrooms
  • salt
  • pepper
  • 2 C. vegetable stock

Directions

Soak the barley for 2 hours in warm water. Drain. Preheat the oven to 350 degrees. Heat the butter in a skillet and saute the onion, mushrooms and barley. Season with salt and pepper and stir until the barley has browned slightly. Place in a casserole and add the vegetable stock. Cover and bake for 1 hour until the barley is cooked, but is still slightly crunchy.


Serve with: Coke Ham
