Baked Black Beans
Ingredients
- 4 slices Bacon, diced
- 1 medium Onion, diced
- 1/2 tsp. Garlic, minced
- 2 cans Black beans
- 1 1/2 C. Beef broth
- 1 tsp. Cumin
- 2 Tbs. Dark rum
- 2 Tbs. Parsley, chopped
- Salt and pepper to taste
Directions
Brown the bacon in a skillet. Add the onion and garlic. Cook until soft. Toss together with the remaining ingredients. Pre-heat the oven to 350 degrees. Place the mixture in a casserole dish. Cover and bake for 1 1/2 hours. Serve warm. Serves 4-6
