Baked Brie with Fresh Herbs
Ingredients
- 1/4 C. sun dried tomatoes, chopped
- 1/2 C. fresh basil leaves
- 2 Tbs. grated parmesan cheese
- 2 Tbs. toasted pecans or walnuts
- 1 Tbs. olive oil
- 1 clove garlic, peeled
- 1/8 tsp. freshly ground pepper
- Salt to taste
- 16 oz. Brie cheese
Directions
In bowl of food processor combine tomato, basil, cheese, nuts, oil, garlic and pepper. Process to form a fine paste. Season with salt. Scrape into a bowl, cover and refrigerate until ready. Bring to room temperature. Trim the white crust from the Brie and cover the top of the cheese with the herb mixture. Place Brie on a baking sheet and bake at 375 degrees oven for about 5 minutes until the cheese is beginning to melt. Transfer to serving plate and surround with crackers. Serve immediately.
