Baked Carrots

Ingredients
- 6 carrots
- 2 Tbs. olive oil
- 1/4 C. butter
- 2 tsp. caraway seeds
- 1 tsp. salt
- 1/2 tsp. freshly ground black pepper
- 2 Tbs. chopped parsley
Directions
Preheat oven to 400 degrees. Cut off ends and tops of carrots. Wash well. Cut lengthwise into halves and then into cubes. Oil a baking dish with a little of the olive oil. Arrange carrots in the dish and add all other ingredients except parsley. Cover. Bake for 30 minutes. Uncover and bake for about 20 minutes more. Remove from oven and sprinkle parsley over top.
