Baked Cheese Grits

This is a great grits recipe that everyone enjoys!

  • 2 1/2 C. water
  • 2/3 C. quick-cooking grits
  • 2 Tbs. light margarine
  • 2 large eggs, lightly beaten
  • 1/2 8 oz. pkg. light pasteurized prepared cheese loaf, cut into 1/2-inch pieces
  • 1/4 tsp. salt
  • 1/4 tsp. ground red pepper
  • vegetable cooking spray

Preheat oven to 400 degrees. Bring 2 2/3 C. water to a boil, add grits and cook (stirring often) for 5 minutes, or until thickened. Remove from heat. Add margarine and next 4 ingredients, stirring until well-blended. Spoon mixture into a 2 qt. baking dish coated with cooking spray. Bake in 400-degree oven for 10 minutes, or until lightly brown.
