Baked Cheesy Grits

Ingredients
- cooking spray
- 3 Tbs. quick-cooking grits
- 1/2 C. skim milk
- 1/2 C. water
- 1 tsp. reduced-fat margarine
- 1/4 C. shredded fat-free sharp cheddar-cheese
- 2 lg. egg whites, lightly beaten
Directions
Preheat oven to 375 degrees. Lightly coat a 2-cup ramekin with cooking spray.
Place grits, milk and water in 1-quart nonstick saucepan. Cook over medium-high heat, stirring occasionally, until liquid is absorbed and grits thicken, about 4 minutes.
Remove pan from heat. Add margarine and cheese, reserving 1/2 tablespoon of cheese for the top. Stir grits until margarine and cheese have melted. Quickly stir the egg whites into the grits and spoon mixture into prepared ramekin. Sprinkle with reserved cheese on top.
Bake until puffed and edges begin to brown, about 15 minutes. Serve immediately.
