Ingredients

  • 4 Chicken Breasts
  • Olive Oil
  • Kosher Salt
  • Black Pepper
  • 1 Onion, Thinly Sliced
  • Breaded Tomatoes
  • 1 1/2 Cup of breadcrumbs
  • 1/4 Cup parmesan cheese
  • 1 Tbs lemon zest
  • 2 Tbs olive oil
  • 15 Cherry Tomatoes

Preheat oven for 400 degrees.
Put salt on chicken breasts and let sit for 10 to 15 minutes.
Rub olive oil all over chicken and on the bottom of the pan.
Season chicken with black pepper and a little bit of salt. Then place chicken in the pan. Place thinly sliced onions over chicken in the pan.
Bake in pan for 30 minutes at 400 degrees. After 30 minutes lower the temperature to 350 and bake for another 10 to 30 minutes or until juices run clear.

While the chicken is cooking, start preparing the tomatoes so you can put them in the oven when you lower the temperature to 350 degrees for the chicken.
Get another baking dish and oil it or use cooking spray.
Use a bowl to mix breadcrumbs, cheese, lemon zest, and olive oil together. Add a little salt and pepper to the mixture.
Cut cherry tomatoes in half and in a single layer in the baking dish. Sprinkle salt and pepper on top. Pour the breadcrumb mixture on top of them. Bake for 20 to 30 minutes on 350 degrees, around the time you lower the temperature for the chicken.

Put chicken breast on a place and breaded tomatoes on top. Serve.
