Baked Chicken with Raisin Bread Dressing

This recipe came from a chef friend of mine who kindly agreed to share it. It's such a nice break from the usual dressings we all serve at the holidays.

Ingredients

  • 1 loaf day-old raisin bread
  • 2/3 C. diced sweet onion
  • 1 1/3 C. diced celery
  • 1/4 lb. margarine
  • 2 tsp. poultry seasoning
  • 1 tsp. salt
  • 1/3 tsp. pepper
  • 2 chickens, cut in quarters
  • butter, as needed for basting chicken

Directions

Cut bread in small cubes. Saute onions and celery in margarine until soft but not browned. Add poultry seasoning, salt and pepper. Pour over bread, tossing to mix. Turn into 2 greased baking pans. Arrange chicken quarters on top of each pan, skin side up. Brush chicken with melted butter. Bake in 350-degree oven for about 45-50 minutes until chicken is tender and browned.
