Baked Cinnamon Apples Stuffed with Candied Walnuts

- 8 lg. red apples (Fuji are good here), peeled and cored
- 1/3 C. lemon juice
- 2 Tbs. sugar
- 2 Tbs. cinnamon
- 1 C. hot water
- 1 C. walnuts
- 1 tsp. hot water
- 1 Tbs. raw sugar
Preheat the oven to 375 degrees and place apples in a large casserole dish and sprinkle the tops with sugar, cinnamon and lemon juice. Place about 1 C. of water in the bottom of the casserole dish and bake for approximately 50 minutes. Cool.
Spray a small cookie sheet with cooking spray, and toss the walnuts, sugar, and teaspoon of water. Roast at 375 degrees for 10 minutes. Cool for 10 minutes, then fill the apples.
