This baked coconut banana dish can be served for a special breakfast treat or as a quick dinnertime dessert.

  • 6 med. bananas
  • 2 Tbs. margarine or butter
  • 1/3 C. orange juice
  • 1 Tbs. lemon juice
  • 1/4 C. packed brown sugar
  • 2/3 C. shredded coconut

Heat oven to 375 degrees. Grease a 10-inch pie plate. Cut bananas crosswise in half; cut each half lengthwise in half. Place in pie plate. Dot bananas with margarine or butter. Drizzle with orange and lemon juices. Sprinkle with brown sugar and coconut. Bake 8-10 minutes or until coconut is golden.
