  • 2 Tbs. butter
  • 1 C. chopped onion
  • 1/2 C. red pepper, diced
  • 1/2 C. green pepper, diced
  • 1/2 C. ham, diced
  • 8 bacon slices, crumbled
  • 4 eggs
  • 1/4 C. milk
  • Salt and pepper to taste

Preheat oven to 400 degrees F. Grease a 12-inch round baking dish. Melt butter in skillet over medium heat. Saute onions, peppers, ham and bacon until onions are clear in color. In a small bowl, whisk eggs and milk. Combine with onion mixture and then pour in baking dish. Bake in oven for 25-30 minutes or until eggs are browned.
