Baked Egg Dish

I make this casserole any time I need something to bring to a brunch or breakfast, or if I have overnight guests. It's quite versatile and I often have the ingredients without having to make a special trip to the grocery store.

Ingredients

  • 6 eggs
  • 2 C. cooked breakfast sausage, ham, bacon, even turkey or chicken will work
  • 2 C. milk (I use skim)
  • 1 C. grated cheddar cheese
  • 1 tsp. prepared mustard
  • salt and pepper to taste
  • 2 slices bread, cubed

Spray cooking spray in a 9x13-inch pan, line with the bread cubes. Mix all other ingredients very well; pour over bread. Refrigerate overnight. Cook straight from refrigerator in a preheated 350-degree oven about 45 minutes. Casserole should appear brown and bubbly. It will puff up while cooking, then settle when it cools. This does not affect the flavor in any way.

  • I dont understand. 2 slices of bread in a 9x13 dish. that means each slice has to be bigger than 7x8. I wonder how big the loaf is?

  • Made it for the first time yesterday and served it this morning to rave reviews. I used ground turkey and my spelt bread. It couldn't have been easier or more delicious!
