  • 2 teaspoons olive oil
  • 1 bunch asparagus
  • 6 eggs
  • 1 shallot, finely chopped
  • 1 cup salt and black pepper

Heat your oven to 350 degrees F. In a large skillet, heat oil and add asparagus and shallots until tender. In a bowl, whisk the eggs, ¾ teaspoon salt and ½ teaspoon pepper. Fold in the asparagus into the mixture. Transfer the mixture to the ramekins, cover with foil and set aside in the refrigerator for about 30 minutes. Bake the dish on a baking sheet for 30 minutes. Remove the cover and cook until golden.
