Baked Endive with Oregano
Ingredients
- 2 med. heads Belgian endives
- vegetable oil spray
- 1/2 tsp. dried oregano, crushed
- freshly ground pepper
- 1/4 C. shredded parmesan cheese
Directions
Preheat oven to 375 degrees. Cut each head of endive lengthwise in half and remove outer leaves. Place, cut sides up, on a piece of foil large enough to folder over all 4 halves. Lightly spray the cut surfaces with vegetable oil. Sprinkle with oregano and pepper. Wrap endive tightly in the foil. Bake or 30 minutes or until tender. Unwrap the foil and sprinkle endive with parmesan cheese. Rewrap and let stand before serving for about 3 minutes or until parmesan cheese melts.
