Ingredients
- 2 yellow onions, chopped
- 3 garlic cloves, crushed
- 3 Tbs. olive oil
- 2 C. tomatoes, crushed
- 1/2 C. chopped parsley
- 1 tsp. oregano
- 2 lb. white fish fillets
- salt, to taste
- pepper, to taste
- 1 lemon, thinly sliced
Directions
Saute onions and garlic in olive oil for 5 minutes. Add tomatoes, parsley, and oregano. Simmer 10 minutes. Grease large casserole or baking dish with a bit of olive oil. Place fish in the bottom of pan. Add salt and pepper. Cover fish with lemon slices. Top the fish with the cooked sauce and cover. Bake in oven at 375 degrees for 45 minutes.
