  • 3 russet potatoes
  • 10 ounces cod
  • ¼ teaspoon chili powder
  • ¼ teaspoon garlic powder
  • ¼ teaspoon dried thyme
  • 1 teaspoon minced garlic
  • 1 cup panko
  • 1/3 cup flour
  • 4 tablespoons olive oil
  • 2 tablespoons mustard
  • 1 egg
  • Salt and pepper to season

Preheat the oven to 425 degrees F and line a large pan with parchment paper. Wash and peel the russet potatoes and cut them into slices. Place the slices in a bowl of cold water for 30 minutes. Remove the fries from the water and dry completely. Combine a pinch of salt and pepper, chili powder, garlic powder, and cumin. Set aside 1 teaspoon of the spices. Place the dried fries on a sheet pan and cover with 1 tablespoon of olive oil and the 1 teaspoon of spices. Toss and spread into an even layer on the pan. Bake for 15 minutes, flip the fries over, and bake for another 15 minutes.

While the fries are baking, prepare the fish by placing the panko, thyme, and garlic in a pan over medium heat with olive oil. Stir for 6 minutes before removing from heat. Pour the flour into a bowl. In a separate bowl, whisk the egg and mustard together. Cut the cod into 6 pieces and season generously with salt and pepper on each side of each piece of cod. Coat each piece in flour and then the egg and mustard mixture. Then coat each piece in the panko mixture. Remove the fries from the oven and separate the fries to either side of the pan, putting the cod pieces in the center. Bake for 10-15 minutes. Serve with lemon wedges.
