Not only is this baked oatmeal casserole delicious, it's super healthy, too! Eat it hot or cold, it's great either way!

  • 2 C. rolled oats
  • 1/3 C. brown sugar
  • 1 tsp. baking powder
  • 1 tsp. cinnamon
  • 1/2 tsp. salt
  • 1 C. walnut pieces
  • 1 C. berries
  • 1/2 C. chocolate chips
  • 2 C. milk
  • 1 large egg
  • 3 Tbs. butter, melted
  • 1 tsp. vanilla extract
  • 1 ripe banana, peeled and sliced

Preheat the oven to 375 degrees. Grease a baking pan. In a large bowl, mix the oats, sugar, baking powder, cinnamon, salt, 1/2 C. walnut pieces, 1/4 C. chocolate chips, and 1/2 C. berries. Pour the oat mixture into the baking dish. Add the remaining walnuts, chocolate chips, and berries on top. In the same bowl, mix together the milk, egg, butter, and vanilla extract. Pour the milk mixture over the the whole thing to soak the oats evenly. Bake for 30 to 40 minutes, or until the top is golden-brown and sprinkle brown sugar on top.
