  • 4 flat iron steaks
  • 1-pound small red potatoes, cut into fourths
  • 1 bunch of asparagus
  • ½ cup cremini mushrooms
  • 4 garlic cloves, minced
  • 1 teaspoon fresh rosemary, chopped
  • 1 teaspoon fresh thyme, chopped
  • ½ cup butter, melted
  • ½ teaspoon salt
  • ¼ teaspoon pepper

Preheat the oven to a broil, and lightly grease a baking sheet with nonstick spray
In a medium sized bowl add the red potatoes, olive oil, asparagus, and mushrooms. Add salt and pepper and toss.
Arrange the mixed vegetables and steak pieces onto the baking sheet.
In a small bowl, mix together the butter, parsley, garlic, rosemary, thyme, salt and pepper. Divide evenly and pour on top of the steak and vegetables.
Place the sheet pan in the oven and let broil for 10 minutes or until steak is cooked through and veggies are tender.
