  • 1 lb. gnocchi
  • 6 slices bacon, chopped
  • 3 garlic cloves, crushed
  • 1 tsp. smoked paprika
  • 1 can diced tomatoes
  • 1 Tbs. tomato paste
  • 1 tsp. sugar
  • 3 Tbs. sour cream
  • Salt
  • Pepper
  • 1 C shredded mozzarella

Preheat the oven to 425 degrees.

Follow cooking instructions for gnocchi. Drain and set aside when finished.

In a skillet, fry the bacon until crisp. Pour off most of the fat then add the garlic and smoked paprika. Fry for 30 seconds.

Add the diced tomatoes, tomato paste and sugar and allow to simmer for 5 minutes.

Remove the pan from the heat and stir in the sour cream, parsley, salt and pepper.

Transfer the gnocchi and sauce to a casserole dish and top with the shredded mozzarella. Bake for 10 minutes until the mozzarella is melted and golden.

Remove from the oven and allow to rest for 5 minutes before serving.
