I've used this recipe for about 11 years. It is always a favorite when I have a brunch. It looks good, tastes great and my family and friends eally enjoy it. And it is easy to do!

  • 10 eggs
  • 1/2 C. flour
  • 1/2 tsp. salt
  • 1 tsp. baking powder
  • 1 1/2 C. shredded Monterey Jack or cheddar cheese
  • 2 C. low fat cottage cheese
  • 1/2 C. melted butter
  • 1 7-oz. can diced green chilies

Beat eggs, add flour, salt, baking powder, shredded cheese, cottage cheese, melted butter and green chilies. Stir well and pour into sprayed 9x11-inch baking dish. Bake at 350 degrees for 25-30 minutes or until done.
