Ingredients
- 1 3-lb. haddock
- 1/2 C. olive oil
- juice of 2 lemons
- 1 garlic clove, crushed
- 1 tsp. oregano
- salt
- pepper
Directions
Preheat oven to 375 degrees. Clean and trim fish, leaving the head intact. Rub with seasonings, which have been mixed together, and sprinkle with juice of 1 lemon. Place fish in greased baking dish with a half cup water. Bake in oven for about 40 minutes. Combine olive oil and lemon juice, beating vigorously with fork. Baste fish often during baking, adding water as needed.
