Spice up these crunchy homemade onion rings with whatever you have on hand, like Cajun or jerk, or if you don’t feel like making them spicy, substitute one teaspoon salt, instead. However you season them, they are sure to be delicious!

  • 2 medium yellow onions
  • 3/4 C. flour
  • 2 tsp. baking powder
  • 3 large eggs
  • 1 1/2 C. fine dry breadcrumbs
  • 1 Tbs. seasoning

Preheat the oven to 450 degrees. Lightly grease 2 rimmed baking sheets. Cut off both ends of each onion and peel. Slice them into 1/2 in. thick slices. Separate them into rings. Place the rings in a medium bowl and cover with cold water. In a shallow dish, combine the flour and baking powder. In another dish, lightly beat the eggs. In another dish, combine the breadcrumbs and seasoning.

One ring at a time, remove them from the water, shaking to remove excess water. Then, dip them first in the flour, then egg, and finally, breadcrumbs. Make sure to remove any excess each time. Place them on the prepared baking sheets and coat the onion rings generously with cooking spray. Bake for 10 minutes, flip the onion rings and bake for an additional 8 to 10 minutes, or until crispy.
