  • 1 ½ - 2 lbs. salmon filets
  • 3 T. honey mustard
  • 3 cloves garlic, minced
  • 3 T. olive oil
  • 1 T. lemon juice
  • 1 T. fresh cracked black pepper
  • salt

Preheat the oven to 400°F. In a small bowl, whisk together the honey mustard, garlic, 2 T. olive oil, lemon juice, pepper, and salt. Line a roasting pan with aluminum foil. Brush the salmon filets on both sides with olive oil. Place fillets skin-side down on the foil-lined pan. Use a basting brush to coat the top side of the fillets with the honey mustard mixture. Place in oven and bake for 8 to 10 minutes until just barely cooked through. Remove from oven and serve with a lemon wedge.
