Baked Mashed Carrots
Ingredients
- l2 carrots, peeled and sliced
- 1 1/2 C. water
- 2 Tbs. sugar
- 3 med. apples, peeled and sliced
- 2 Tbs. brown sugar
- 2 Tbs. margarine or butter
- 1 tsp. cinnamon
- 1/4 tsp. nutmeg
Directions
Boil carrots in 1 C. of water with sugar. When well done, drain thoroughly and mash. Simmer apples in the remaining 1/2 C. water with brown sugar. As soon as they soften, drain thoroughly and mash. Combine carrots, apples, 1 Tbs. of margarine (or butter), and cinnamon. Beat with fork until fluffy. Put into casserole dish and sprinkle with nutmeg. Dot with remaining 1 Tbs. of margarine (or butter). Bake at 400 degrees for 30 minutes or until lightly brown.
