  • 2 lb. boneless, skinless chicken breast
  • 1/2 tsp. salt
  • 2 C cherry tomatoes
  • 2 C shredded mozzarella
  • 1 C minced garlic
  • 1 1/2 tsp. olive oil

Rub both sides of chicken breast with salt. Place in casserole dish.

Preheat oven to 375 degrees.

In a bowl, cut the cherry tomatoes in half and sprinkle olive oil.

Place tomatoes, shredded mozzarella and minced garlic on top and around chicken.

Bake uncovered for 45 minutes, or until the chicken is well browned on the top and cooked through. Remove from oven and cool for 5 minutes. Serve warm.
