These zucchini crisps make a great snack since they are healthier than normal chips and taste just as good! As an added bonus, they are quick and easy to make, too!

  • 2 zucchinis
  • 1 Tbs. oil
  • 1/2 C. bread crumbs
  • 1/2 C. Parmesan cheese
  • 1/2 tsp. salt
  • pepper, to taste

Preheat the oven to 450 degrees. Slice the zucchini into 1/4 inch thick rounds. Coat the slices in oil. In a bowl, combine the bread crumbs, Parmesan, salt , and pepper. Dip the oil-coated slices into the bread crumb mixture and place the covered slices on a greased baking sheet. bake for 18 to 22 minutes.
