  • 16 strips of crispy bacon
  • 12 potatoes, cut into 2" pieces
  • 2 (16-oz.) cheddar cheese, shredded
  • 1 C. heavy cream
  • 1 C. Italian bread crumbs
  • 6 Tbs. butter

Preheat oven at 400 degrees F. Crumble bacon and set aside. Spray casserole dish with cooking spray. Boil potatoes with 2 Tbs. butter until done. Heat cream with 1 cheese until it forms a cheese sauce. Set aside. Melt 4 Tbs. butter in the microwave. Stir in bread crumbs just to coat them. Spoon 1/3 of the cheese sauce on the bottom of the dish. Put half of the potatoes in the dish. Next, add another third of the cheese sauce. Add the remainder of the potatoes, followed by the rest of the cheese sauce and additional cheese, if you desire. Top off with the bread crumbs and then the crumbled bacon. Bake for 20 to 25 minutes or until cheese is golden brown.
