Baked Potato Soup

A very good soup for any time of the year.

Ingredients

  • 1/4 C. butter
  • 1/4 C. chopped green onion
  • 1/4 C. flour
  • 1 can 14.5 oz. chicken broth
  • 1 can evaporated milk 12 oz.
  • 3 lg. baking potatoes (baked)
  • 1/3 C. bacon cooked and crumbled
  • 1 C. shredded cheddar cheese
  • 1 tsp. dill weed
  • salt
  • lemon pepper

Directions

Melt butter in large sauce pan over medium heat. Add onion stirring until tender. Stir in flour slowly. Then stir in broth and milk slowly stirring constantly. Mash 1 potato and add to broth mixture. Cook over medium heat until it reaches a boil. Dice the remaining potatoes with skins on and add to soup. Add dill weed, salt and lemon pepper to taste. Ladle into bowls and top with cheese and bacon crumbs. Enjoy -

May also add diced cooked carrots for a more colorful dish.

  • It was delicious! I think the secret is using baked potatoes! We did add some bacon left over from breakfast, crumbled and that added such a good flavor.
