  • 3 Tbs. green onions, sliced
  • 3 Tbs. butter, softened
  • 3 Tbs. all-purpose flour
  • 4 C. milk
  • Salt and pepper to taste
  • 2 large potatoes, baked and chopped
  • 1 1/2 C. American cheese, shredded
  • 1/2 C. crumbled bacon bits

Cook onion and butter over medium heat until tender in a large pot. Stir in flour, milk, salt and pepper. Stir for 12 minutes or until thick. Slowly add potato and cheese. Stir until cheese melts. When done, top with more shredded cheese and bacon bits.
