  • 4 C. chicken stock
  • 2 tsp. chicken soup base
  • 4 large potatoes, cubed
  • 1/2 white onion chopped
  • 1 tsp. chopped garlic
  • 2 Tbsp. butter
  • 2 Tbsp. flour
  • 4 oz. cream cheese
  • 1 tsp. salt
  • 1/2 tsp. black pepper
  • 2 tsp. chives
  • 2 Tbsp. bacon bits
  • 2 Tbsp. shredded cheddar cheese

Put the cubed potatoes, chicken stock, and soup base in a pot. Cook over medium for 15 minutes until the potatoes are tender. Meanwhile, heat butter in a soup pot until it melts and cook the onions a few minutes. Put the flour on top and cook another minute. Add the potato and chicken stock slowly until the mixture is blended. Put in the cream cheese until it melts. Season with salt, pepper, chives, and bacon bits. Garnish the soup with shredded cheese before serving.
