  • 1 1/2 lb. small red potatoes, quartered
  • 1 Tbs. olive oil
  • 4 tsp. garlic, finely minced
  • 3/4 tsp. coarse salt
  • 1/2 tsp. paprika
  • 1/4 tsp. fresh ground pepper
  • Greek Yogurt Honey Mustard Dip:
  • 6 oz. container fat-free Greek yogurt plain
  • 1 Tbs. whole grain dijon-style mustard
  • 1 tsp. honey

Preheat your oven to 425 degrees F. Place potatoes in large bowl and drizzle olive oil over potatoes. Toss. Sprinkle garlic, salt, paprika and pepper over potatoes. Toss to coat well. Line a baking sheet with foil and lightly spray with cooking spray. Arrange potatoes on baking sheet. Roast for 20 minutes. Broil potatoes until crisp. Watch closely. For dip, mix all ingredients well in bowl and pour in serving cup.
