  • 2 Cups of Almond Milk
  • 2 Tablespoons of Butter
  • 2 Tablespoons of Flour
  • 1 ½ Cups of Shredded Mozzarella Cheese
  • 1 Box of Pasta
  • 1 Cup of Chopped Broccoli
  • 1 Cup of Diced Pumpkin
  • 1 Pinch of Salt
  • 1 Pinch of Pepper
  • 1 Pinch of Red Pepper Flakes

Begin by cooking the pasta according to the package’s instructions and preheating the oven to 400 degrees Fahrenheit. Then, melt the butter in a large skillet over a medium-low heat and stir in the flour until everything is smooth. Heat up the milk in the microwave for 1 minute and then gradually pour it into the buttery mixture, whisking constantly.

After about 5 minutes, stir in 1 cup of cheese with the broccoli, pumpkin, salt, pepper, and red pepper flakes. Grease a baking pan and then pour the pasta into it, covering it with the cheese sauce and topping everything with the remaining cheese. Bake for 20-25 minutes or until it starts to look golden.

Serve warm and enjoy!
