  • 6 eggs
  • ½ C. milk
  • 1 lb. salmon fillet, smoked
  • 1 C. zucchini, chopped
  • ½ C. green onion, chopped
  • 1 C. green pepper
  • ¾ C. fresh spinach, chopped
  • 1 C. mozzarella cheese
  • Salt, to taste
  • Black pepper, to taste
  • Dried basil

Preheat the oven to 350 degrees F. Chop the salmon up into chunks. Chop up zucchini, green onionm green pepper, and spinach and set aside. Crack the eggs into a large bowl, whisk, and toss in all the other ingredients except the basil. Mix all ingredients together and pour into a casserole oven safe dish. Top with mozzarella cheese and dried casserole leaves. Place into oven and cook for 25 minutes or until cooked through and cheese is browned. Remove from oven and serve.
